Winemaking Notes:
With hints of wild strawberry and bouquet garni herbs. Super fine tannins with delicious wild forest fruit, underlying savoury nuances and a delicacy of structure. Acid is lacy and mouthwatering yet approachable and moreish. Merlot and Shiraz were picked in the cool of night and fermented separately at moderate temperatures. The fruit was oxidatively handled to promote complexity and nuance in the wines while retaining its beautiful pale colour.
